Biltong is the authentic South African version of US beef jerky. The primary difference between the two is that jerky is cooked at high heat and is saturated with preservatives. Biltong is not cooked, rather, it is dry cured and it goes through the same process as salami and bologna etc. Biltong is soft and tender and has no preservatives. Jerky comes in thin slices. Biltong comes in thin slices and sticks.
